One of Fort Collins’ first food trucks is returning to its roots.

The Waffle Lab — which started as a food truck in 2012 and opened a storefront in 2016 — closed its restaurant at 130 W. Olive St. on Aug. 5, said co-owner Rachael Roumaya. The food truck operation will remain unchanged.

Burger Lab, a burger restaurant also owned by Rachael, her husband Brad Roumaya and their business partner Ashley Bott, will close its current location at The Exchange, 234 N. College Ave., later this month. The restaurant will take over the former location of The Waffle Lab on Olive Street and plans to open there on Labor Day weekend.

The Burger Lab began as a satellite location of the Waffle Lab in The Exchange in late 2021. It was renamed The Burger Lab in December 2022 and serves Smash Burgers, Elk Burgers, and Beyond Meat Burgers.
