Last location of long-standing Lexington restaurant to close in 2022 after change of ownership

A longtime restaurant near Fayette Mall has closed its last location in Lexington.

Saul Good Restaurant & Pub, which opened in 2008 at 3901 Mall Road, has closed, according to a CBL Properties spokeswoman. A sign was posted on the door in early April, but the mall initially said the closure was only temporary.

Now the mall has confirmed that the closure is permanent. The mall was located near the Cinemark Fayette Mall movie theater.

The restaurant was opened by Rob and Diane Perez, who sold it to Lexington entrepreneur Saul Rubin in 2022.

Rubin did not respond to requests for comment.

Rob Perez said Monday: “Diane and I were very fortunate to serve the wonderful customers of Saul Good for the first 14 years! It was a pleasure!”

Saul Good Restaurant Locations

The restaurant’s menu specialized in innovative pizzas and quickly became a popular spot in Lexington. The Perezes expanded, opening a location in Hamburg and on Broadway in downtown Lexington, but both closed in recent years. They are now focused on expanding their DV8 Kitchen and Bakery locations.

Rubin, a Lexington marketer, said in 2022 that he looks forward to taking on Saul Good and that he plans to modernize the menu and decor.

“When I saw the opportunity to own a local restaurant known for its great food and even better team, I jumped at the opportunity,” Rubin said in a press release. “We will build on what Rob and Diane have built and evolve into a restaurant that has great food, great drinks and cares about its employees beyond measure.”
