The cast iron experts go where they have never been before.
As if we couldn’t love Lodge any more, the brand that makes many of our favorite cast iron products—from Dutch ovens perfect for making stew to deep-fried chicken skillets to our coveted Dolly Parton line—now offers baking mixes specifically for their cast iron skillets.
The versatile pans make great pizza, pies, casseroles, pork chops, and even whole chickens, but one of our absolute favorite dishes to make in a cast iron skillet is cornbread. Switching from a casserole dish to a skillet is completely effortless and makes a huge difference. When baking in a cast iron skillet, the top turns golden brown and caramelized, and the edges get even crispier.
Any cornbread will work in a cast iron skillet, whether you make the dough yourself—like this popular Golden Sweet Cornbread—or buy a ready-made mix, like the bulk pack of Jiffy or Dolly’s Sweet Cornbread basic ingredients.
Lodge’s Skillet Cornbread Baking Mixes
Lodge now has its own line of cornbread mixes that bake beautifully in any of their pans (but it’s OK if you use another brand). The four varieties are mixed with eggs, butter, buttermilk, milk or canola oil, depending on which variety you choose.
-
Real South: Described as buttery and savory, this mix is a typical southern cornbread, not too sweet and perfect with a big pat of butter.
-
Sweet Spot: This sweeter version of cornbread is described as sweet and fluffy and is a great side dish to grilled chicken.
-
Sweet as honey: Described as sweet and golden brown, this cornbread gets its sweetness from honey and tastes even better when drizzled with honey when serving.
-
Hotshot Jalapeño: The blend is described as bright and spicy, with a kick of heat and jalapeño. You can add your own cheddar to create a classic side dish for chili or soup.
These mixes, all of which fit in a 10-inch cast iron skillet, are available on the Lodge website, Amazon, or Walmart, and are worth keeping in your pantry. Cornbread is a perfect side dish year-round and also makes a great snack.
