Owner of a macaron shop in Plymouth fulfills his dream of the State Fair

The owner of a Plymouth macaron shop brought her food truck and a reminder to follow your passion to the Minnesota State Fair.

When you see Nikkolette Krumheur at work, you would never guess that she studied mathematics and worked in American business for 20 years.

But in 2018, she took the leap into the unknown and devoted herself full-time to her passion for making macarons.

“We make French macarons, I always say ‘macaroni, leave out the I, haha,'” said Nikkolette Krumheur, owner of Nikkolette’s Macarons.

She now has two stores. In addition to the one in Plymouth, she also owns a store in St. Paul and a vintage food truck that was part of the Great Minnesota Get Together for the second year in a row.

“I’ve lived in Minnesota my whole life, and being at the fair is a big deal. So when we got on the line, I just got the call, hung up, went to my husband and said, ‘We’re at the fair! We’re at the fair!’ It’s a dream come true for anyone when you have a grocery store,” Krumheur said.

And dreams can come true, even for people with food allergies. According to Krumheur, many fairground foods are not gluten-free. Nikkolette’s macarons, however, are.

“At first I thought we weren’t real State Fair food, but people love them and it’s really nice because they’re gluten-free,” Krumheur said.

Her truck features amazing flavors like candy corn, cotton candy, root beer float, and mini donut macarons. She estimates she sells about 500 to 600 boxes of macarons a day.

“The first two days of the fair were record-breaking, so there was a lot going on, which is great. The next few days were a bit warmer. Now we’re going to have days with perfect weather, so it’s going to be really good,” said Krumheur.

Krumheur plans to keep the truck alive by participating in more festivals and fairs in the future.

For now, she will enjoy the 12 days of the State Fair.

“I love the fair, I love all parts of the fair, so it’s so much fun to get a glimpse behind the scenes of the fair and we just get to know all the people around us and it’s like a little family in the West End,” Krumheur said.
