Sea Boy, a new restaurant, will be the centerpiece of the North Main business district

Jonathan Cox opens Sea Boy

Aug. 29. Jonathan Cox, the chef who has run the kitchens for restaurateur Jon Dressler of Rare Roots Hospitality, will open Seaboy Restaurant and Bar on North Main in Cornelius, focusing on “good food, community and sustainability.”

The 10-table restaurant will be located in the former DanielSan space at 20822 North Main.

“Seaboy is built on a love of good food, community and sustainability. We are a team of locals who care about where our ingredients come from and how they are prepared. With 10 tables in the dining room, we ensure each dish gets the attention it deserves and make every visit feel like part of the community we are proud to be a part of. We believe in keeping things simple and honest and we are here to make sure every visit feels special.”

Cox will stay at Rare Roots until Seaboy opens.

“We are sad to see him go, but we are excited to see what the future holds for him,” said Dressler. “Jonny has always demonstrated outstanding creativity, work ethic and drive and we will miss him.”

Cox has worked in the kitchen of nearly every Rare Roots concept, playing “an integral role at Dogwood, Fin & Fino Uptown, Fin & Fino Birkdale and Chapter 6 in particular,” Dressler said.
