Kumamoto-based Fundodai has been in the business of selling high-quality food seasonings for over 150 years and can rightly be called timeless. But that doesn’t stop the company from launching creative new foods that occasionally defy conventional logic – such as the colorless, transparent soy sauce that was launched in February 2019. Originally developed as an alternative to regular soy sauce to prevent children in kindergartens from getting stains on their clothes when they eat, the water-like seasoning confused us when we first tried it ourselves.

This year, sales of Fundodai’s clear soy sauce have increased 1.5 times in Japan and 2 times overseas compared to last year. In fact, it is exported to 25 countries and is now even used in Michelin-starred restaurants in Europe.

Its uniqueness as a product has also made it a popular souvenir among visitors to Japan. Demachi Hisaya, Fundodai’s antenna shop in Tokyo’s famous Asakusa district, has reported that about 60 to 70 percent of its customers are foreigners. To serve all of its customers, Demachi Hisaya has added NFC tags to many of its products so that information and sample recipe ideas can be instantly translated into different languages ​​simply by holding a smartphone over the phone throughout the day.

Below we’ve translated the relatively simple instructions on how to make the pudding for anyone who wants to treat themselves to something cool for the eyes and palate. The clear color may initially be a little surprising to those who are used to typical yellow Japanese pudding with a dash of brown caramel sauce, but don’t let that stop you from trying this pudding!

Japanese style clear soy sauce based pudding

Makes 4 pudding cups of 130 milliliters each

Pudding ingredients:

● Water – 340 milliliters

● Vanilla extract – between 10 and 20 drops

● Granulated sugar – 50 grams

● Agar – 11 grams

Clear Soy Sauce Caramel Sauce Ingredients:

● Fundodai’s standard transparent soy sauce – 2 teaspoons

● MSubscribe (a clear, thick Japanese sweetener) – 3 tablespoons

Application:

  1. First, prepare the pudding base by mixing the granulated sugar and agar-agar.

  2. Pour the water into a saucepan and place over low heat. When it boils, add the sugar mixture and several drops of vanilla extract and stir with a rubber spatula until completely dissolved.

  3. Place the pot in non-cold water to lower the temperature to 50-40° Celsius and add about 5 drops of vanilla extract. Pour the mixture into pudding molds and leave to cool in the refrigerator for about an hour.

  4. Next, prepare the caramel sauce. Combine the transparent soy sauce with the Subscribe Put in a bowl and mix well.
