Since opening in 2021, House of Western’s biggest challenge has been its size.

The bar, restaurant and entertainment centre, which was known as Western Proper before its rebranding last year, spans 10,500 square metres.

Starting July 18, the space in downtown Boise at 610 W. Idaho St. will be reborn – as three separate concepts.

“It’s so big,” explained owner Cary Prewitt, “that one concept doesn’t necessarily fit.”

Two of them are new. Due West, an upscale restaurant, greets guests immediately to the left as they enter. The National, a classic American bistro and bar, is on the right.

In the back, the House of Western continues to offer a fun, casual experience with mini bowling lanes, arcade games, plenty of TVs and a revamped menu with an emphasis on sports pub fare.

Part of the Western Collective group – Western Collective is Prewitt’s Garden City brewery – the three-in-one idea was inspired in part by a popular trio of dining establishments that operate under one roof on 8th Street: Red Feather Lounge, Bittercreek Alehouse and Diablo & Sons Saloon.

“The fact is we can offer different experiences to different people,” Prewitt said, “… because of the size of the restaurant.”

Work is currently underway to give each room an individual flair. Here are some of the highlights of the concepts.

Due west

A press release says Due West greets guests with “carefully crafted tableside cocktails” and offers a “modern western” atmosphere, including the option of a Bone Marrow Old Fashioned. House specialties include smoked steelhead rillettes, salmon tartare carpaccio, duck tostadas, elk and pork meatballs, king crab macaroni and cheese, wild boar ribs, a bison rib-eye steak and more. The National

The bar-focused National accepts walk-in customers only and offers “upscale versions of classic American dishes.” Prewitt explained, “The way I envision it, it’s actually a bistro.” Menu highlights include a tuna tower with avocado, a pork tomahawk with miso butterscotch sauce, cold lobster tail, vegetarian Bolognese, salt and pepper calamari, steaks, Parker House rolls and more. The bar will serve plenty of classic cocktails — think martinis and Manhattans — “completed with warm biscuits and milk,” the press release continued. Plus, “we’ll have a wine list with about 40 American wines,” Prewitt said. Hours: 4 p.m. to 10 p.m. or later daily. Online: thenationalboise.com.

With miniature bowling alleys, air hockey, arcade games and televised sports, House of Western provides fun in the spacious back area.The menu will be revamped to focus on the most popular sports bar items,” the press release states, “including burgers and pizza. … House of Western will remain open seven days a week and will continue to offer its popular $30 unlimited drink specials on weekends. During the House of Western’s three-year history, the menu has been adapted, but the split into three locations is essentially a complete overhaul of the massive eatery.

“We were much more excited about implementing multiple concepts to better fit the experience,” Prewitt said, “and better fit the space.”
