Michelin-starred Chicago cinema Ever shines in FX’s “The Bear”

CHICAGO– Ever Restaurant has delighted diners since it opened in Chicago’s Fulton Market District, but never was its success greater than when it appeared on FX’s The Bear.

The two-Michelin-starred restaurant, led by Chef Curtis Duffy and Operations Manager Michael Muser, is a prominent setting for dramatic events in both the second and third seasons of the critically acclaimed series.

“The food was of course from Ever, the plating and everything else was done by myself and the team,” said Duffy, who serves as culinary consultant. “It shows our city in such a great light and shows our industry at its true core.”

Evers’ chic dining room, ornate light fixtures and immaculate kitchen are unmistakably featured in the Hulu series. Duffy said the restaurant was chosen by producers for its style and meticulous standards.

“It’s the stemware that’s polished, the silverware, the napkin that’s two inches from the rim,” Duffy said. “Every little detail has been thought of, every detail we try to exceed guests’ expectations from the moment they walk in the door.”

Duffy said a scene in the season two episode “Forks” in which an expeditor station uses color codes for guests’ requests and dietary restrictions was very accurate. He described the coordination between the kitchen and dining room at Ever as similar to air traffic control.

“I think they’re imagining how someone would walk into that restaurant and what exactly would happen,” Duffy said. “The expediter really takes full control of the kitchen.”

The personal journey of a character named Richie in “The Bear” is particularly notable for Duffy. While appearing for a time on Ever in the show, Richie’s attitude changes from apathetic to motivated as he falls in love with working at a prestigious restaurant.

“I see that with so many young chefs these days, that we can influence their mindset,” Duffy said. “I tell them every day, it’s not a light switch.”

Ever is known for its multi-course tasting menu, perfectly dressed with expertly selected vegetables and proteins. Duffy said that despite its media popularity, Ever will continue to evolve while supporting sustainability practices on the farms where its ingredients are sourced.

“That experience alone is a representation of who I am today,” Duffy said. “We try to grow very seasonal ingredients from farmers who are nearby, from surrounding states.”
