Peninsula Hospitality recently brought a touch of Hawaiian culture to Mumbai with the opening of Waikiki, a contemporary dining experience and tiki bar. The menu was originally curated by Chef David Cagle, a seasoned professional with 28 years of experience in the hospitality industry who began his career with the Peninsula Group in March 2023. Now, Waikiki will expand its culinary offerings with the appointment of Harpreet Singh Bhatti as Head Chef. With over a decade of culinary experience, Bhatti brings a visionary approach to the kitchen, characterized by innovation and a passion for fine dining. Bhatti began his professional training at the Taj Mahal Palace in Mumbai, at Wasabi by Morimoto restaurant, where he honed his culinary skills under the guidance of Japanese chefs including Masaki Kobayashi-san – his time at the Taj has significantly shaped his expertise and approach to the culinary arts, where he gained extensive knowledge of various departments of the hospitality industry. At Waikiki, he is dedicated to creating dishes that embody the vibrant spirit of Aloha. His culinary philosophy blends Japanese and Hawaiian cuisine, creating unique fusions such as Robatoyaki – a complete charcoal grilling technique. At Waikiki, Bhatti is ready to incorporate both traditional flavors and modern techniques to ensure the dining experience is unique and unforgettable.
