Sauce Magazine – Food truck Norris opens a brick-and-mortar location in Ellisville

Truck Norris Twisted Eats features a full bar, indoor and outdoor seating, and the food truck’s popular Tot-Chos

Food truck owner and operator Todd Norris has signed a lease for a storefront at 15856 Clayton Road in Ellisville, in the former Alibi 25 sports bar building. Norris is behind Truck Norris, a food truck he founded in 2017 that offers a new twist on comfort food. He has been a regular at Sauce Food Truck Friday for several years.

The 2,500-square-foot eatery, which will be called Truck Norris Twisted Eats, will feature a full bar, indoor and outdoor seating, and the food truck’s most popular dish – tot-chos – will take up a large space on the menu.

“This new project is pretty exciting,” Norris said. “We’re taking a lot of elements from the truck and putting them in the restaurant.”

With the opening currently likely to be either December 2024 or early 2025, Norris said the menu is still being finalized, but the plan is to have all of the popular Tot Chos flavors on the menu. The food truck’s most popular menu item starts with a base of crispy tater tots topped with proteins, cheese and sauces, and comes in flavors reminiscent of dishes like gyro, buffalo chicken and Nashville hot chicken, to name a few. The brick-and-mortar shop’s menu will also include sandwiches like the Chicken McFly, as well as a selection of appetizers and some kids’ meals.

As for the bar menu, Norris said the eatery will stick with simple offerings at first before expanding to include a larger selection of what he calls “fun drinks.” Guests will be able to find beer, wine, cocktails and bottled water when Truck Norris Twisted Eats opens.

The venue will seat around 100 people inside, with a few tables outside in the front. Norris promises that those dining inside will have a choice of TVs to watch their favorite sporting events, as well as a fun atmosphere.

“I want (guests) to always have something to see and talk about. I try to create a place where people want to hang out, eat some tot cho in a fun atmosphere and spend time with their friends.”

And as for the decor, Norris said a replica of the front of his food truck protruding from one of the eatery’s walls will be one of the restaurant’s larger design elements. The color scheme will reflect the Truck Norris branding in blue and yellow, and Norris’ love of movies and pop culture could come in the form of parody movie posters on the walls.

As for the future of the food truck, Norris plans to keep it in operation, but said the truck will likely only be used for private and food truck-focused events.
